Banoffee trifle (V)
Our banoffee trifle is a true showstopper – and you don’t have to be a star baker to make it! ⭐🎂
Made with Fenlands Toffee Vodka from and topped with delicious grated Fairtrade chocolate and popcorn 🍿 we’re sure you’ll go bananas for it 🍌
SERVES: 6-8 PREP (INCLUDING COOLING TIME): 3 HRS 30 MINS APPROX COOK: 5 MINS
Ingredients
- 1 tbsp instant coffee powder
- 2-3 tbsp Fenlands Toffee Vodka or Baileys
- 2 x 750g cartons Ambrosia Devon Custard
- 180g Co-op chocolate brownies
- 180g chocolate, eg Co-op Irresistible Fairtrade dark chocolate
- 4 bananas
- 300ml double cream
- 1 tsp vanilla essence
- 1 tbsp icing sugar Toffee popcorn, grated Fairtrade chocolate and chocolate flakes, to decorate
Method
- Put the coffee and alcohol in a small pan and stir together. Warm gently over a low heat until the coffee is starting to dissolve. Stir until smooth then stir in 1 carton of custard.
- Cut the brownies into small chunks, put in the base of a serving bowl. Pour over the coffee custard and chill.
- Pour the remaining custard into a small pan and heat gently. Do not boil. Remove from heat and break in the chocolate. Leave for 5 mins to melt, then stir until smooth. Leave to cool for 10 mins.
- Cut the bananas into thick slices and arrange around the edge of the serving bowl. Spoon the custard over the bananas, and chill for 2 hours or overnight.
- Whip together the cream, vanilla and icing sugar until soft peaks form. Swirl over the set custard and decorate with the popcorn, grated chocolate and flakes.
