Bonfire veggie sausages & beans
Simply pop this low-prep dish in the oven and let it work its magic

Ingredients:
- 300g pack GRO sizzlin’ sausages
- 1 tbsp olive oil
- 1 onion, chopped
- 1 courgette, diced
- 1 orange pepper, diced
- 1 garlic clove, crushed
- 400g can Italian chopped tomatoes
- 400g can mixed beans, drained and rinsed
- 3 tbsp BBQ sauce
- Chopped flat leaf parsley, to garnish
- Crusty bread, to serve
Method
- Cook the sausages under a preheated medium-high grill for 14 mins, turning every 3-4 mins, until golden and cooked through.
- Meanwhile, heat the oil in a large frying pan over a medium-high heat.
- Cook the onion, courgette and pepper for 4-5 mins, stirring frequently.
- Add the garlic and cook for a further 2-3 mins, until the vegetables are just softened.
- Stir in the tomatoes, beans, BBQ sauce and 250ml water and bring to the boil.
- Let the mixture bubble over a medium heat for a further 7-8 mins, stirring occasionally, until the beans are tender and the sauce has thickened Season to taste.
- Halve the grilled sausages crossways, then add to the pan and heat through for a further 1-2 mins.
- Garnish with chopped parsley and serve with crusty bread.
