Cheat's easy berry tiramisu
Full of British spirit and so easy to make!
A perfect dessert for the Platinum Jubilee Weekend 👑

Ready in: 40 minutes (plus chilling time)
Ingredients:
- 100ml Stokes Blue Mountain Blend Coffee, brewed
- 2 tbsp Fenspirits Toffee Vodka
- 24 sponge fingers
- 300g soft cheese
- 2 tbsp golden caster sugar
- 300ml double cream
- 2 tsp vanilla extract
- 2 tbsp Jenny’s Jams Raspberry Jam 4 strawberries, hulled and halved
- 85g raspberries
- 55g blueberries
- 2 tsp cocoa powder
- 25g dark chocolate, grated
Method
1. Pour the coffee and vodka into a dish large enough to dip your sponge fingers in and set aside.
2. Whisk the soft cheese, sugar, double cream and vanilla extract together until smooth and creamy.
3. Put the jam into a bowl and stir to loosen. Add the strawberries, raspberries and blueberries and gently mix, until coated.
4. Dip three sponge fingers into the coffee and arrange on an individual serving plate. Spread over an eighth of the soft cheese mixture, arrange some of the berries on top, and dust with cocoa powder. Dip three more sponge fingers into the coffee mixture and arrange over the top, in the opposite direction to the first layer. Spread with another eighth of the soft cheese mixture and some more of the berries, then sprinkle with some grated chocolate. Repeat to make four individual stacks. Chill for at least 2 hours before serving.
