Chocolate orange mousse
SERVES 10 TAKES 45 minutes to make
Ingredients
- 2 x 100g bars Co-op Irresistible Fairtrade 56% cocoa dark chocolate with orange
- 400ml Co-op double cream, plus 2 tbsp
- 1 tsp Co-op unsalted butter
- Zest of 2 oranges
- 50g Co-op Irresistible Fairtrade Ghanaian white chocolate
- 10 chocolate egg decorations
- 3 tsp Co-op Fairtrade cocoa powder, for dusting
Method
- Break up the dark chocolate and put in a heatproof bowl with 200ml of the double cream and the butter.
- Place over a pan of gently simmering water, making sure the base doesn’t touch the surface.
- Heat for 8-10 mins, stirring once or twice, until the chocolate has melted, then stir in the orange zest.
- Remove the bowl from the pan and leave to cool completely.
- Meanwhile, melt the white chocolate with the 2 tbsp double cream in the same way, then leave to cool.
- Spoon the mixture into the base of 5 serving glasses.
- Whisk the remaining cream into soft peaks.
- Fold into the cooled chocolate orange mixture until combined.
- Spoon into the glasses then chill for at least 30 mins.
- Decorate each mousse with 2 chocolate egg decorations and a dusting of cocoa powder.
