Coconut ice slice (V)
This cool summer dessert is deliciously simple, made with just four ingredients! Make and freeze the night before for an icy cold treat you can share with friends and family.
SERVES 6 PREP 10 MINUTES FREEZE 10 HOURS
Ingredients:
- 400ml tin coconut milk
- 400ml tin condensed milk
- Juice and zest of 1 lime
- 1 tsp vanilla essence
Method:
- Line a loaf tin with cling film, letting the edges hag over the side.
- Mix together the milks, most of the lime zest, the juice and vanilla essence.
- Pour into the lined tin and freeze overnight.
- Pull the edges of the cling film to remove the coconut ice from the tin.
- To serve, sprinkle over the remaining lime zest an slice.
