Golden milk bircher
Go for gold with this overnight oats recipe - it's quick, easy and perfect to surprise your family with the next morning!
SERVES 1 READY IN: 15MINS.
What you'll need:
- 1 tsp coconut oil
- 1/2 tsp ground turmeric
- 3 thin slices Co-op root ginger, unpeeled
- 1 cinnamon stick or 1/4 tsp ground cinnamon
- 200ml unsweetened almond milk
- 60g Co-op rolled oats
- 1 tbsp Co-op 0% fat Greek style natural yogurt, plus a little extra to serve
- 1 tsp Co-op clear honey
- 1/2 small Co-op Granny Smith apple, thinly sliced
- Handful Co-op blackberries
What to do:
- In a small saucepan, melt the coconut oil over a low heat
- Add the turmeric, ginger slices and cinnamon stick then fry gently for 2-3 mins
- Pour in the almond milk, increase the heat and simmer for 2 mins
- Put the oats in a mixing bowl or jug, pour the warm milk over them and stir to combine
- Leave to cool, then cover and chill in the fridge until morning
- To serve the bircher, remove the cinnamon and ginger, stir in the yogurt, honey and most of the apple, then top with a little more yogurt, the rest of the apple and the blackberries
