Honey & garlic chicken kebabs
Bring the takeaway to your kitchen with these quick and easy honey and garlic chicken kebabs.

INGREDIENTS:
- 2 tbsp Love Local runny honey
- 200g natural yogurt
- 1 clove garlic, crushed
- 4 large chicken breasts, each cut into 6-8 chunks
- 2 red peppers, deseeded and quartered
- 2 red onions, peeled and quartered
- 2 tbsp melted butter
- 10cm piece cucumber
- 2 tbsp fresh mint, chopped (optional)
- 4 pitta breads
METHOD:
- Stir together the honey, 2 tbsp yogurt and garlic. Add the chicken, stir well and leave to marinate for at least 10 mins, but preferably for 2-3 hours, or overnight, turning occasionally.
- Preheat the grill on high. Thread the chicken, peppers and onions onto 6-8 long metal skewers, brush with the melted butter and grill for 10 mins, turning frequently and drizzling with a little extra honey, if desired.
- Meanwhile, make tzatziki by grating the cucumber onto a sheet of kitchen paper. Wrap the paper round the cucumber and squeeze over a sink to remove the liquid. Put the cucumber in a small bowl. Add the remaining yogurt, the mint and freshly ground black pepper and a pinch of salt.
- Char or toast the pitta breads for 1-2 mins, split open and serve each with kebabs and a dollop of tzatziki.
TIP: For a vegetarian alternative, replace the chicken with 2 x 200g blocks of halloumi cut into 2cm cubes.
