Mince pie Eton mess (V)
Leftover mince pies? Hard to come by but if you have any spare, why not create a delicious dessert with them.
Serves 4
Ingredients:
- 200ml Co-op double cream
- 100g Co-op 0% fat Greek style natural yogurt
- 1 tbsp orange juice, plus orange peel, to serve
- 2 Gadsby's mince pies
- 2 Co-op Irresistible meringue nests
- 2 tbsp Co-op Irresistible cranberry and port sauce
Method:
- Whisk the double cream to soft peaks in a bowl
- Stir in the yogurt and orange juice
- Crumble the mince pies and meringue nests into large chunks, then stir through the cream mixture along with the cranberry and port sauce
- Divide between serving glasses, then scatter with orange zest to serve
