Petrified peppers (V) (GF)
Eat, drink and be scary with these petrifying peppers - a great healthy nibble that's sure to put a spooky smile on your face. 😲
SERVES: 8 TIME: 20MINS Vegan, gluten-free, dairy-free, egg-free.
WHAT YOU'LL NEED:
- 2 red peppers
- 2 orange peppers
- 4 x 200g tubs Co-op reduced fat houmous
- Cucumber batons, to serve
WHAT TO DO:
- Cut a circle around the stems of 2 red peppers and 2 orange peppers, to make lids, and discard the seeds
- Cut ghoulish faces in the sides, then fill the peppers using 4 x 200g tubs Co-op reduced fat houmous and replace the lids
- Serve with cucumber batons — Tenderstem® broccoli, carrot and radishes would also work well
