Turkey and apple slices

Make the most out of your roast with these turkey and apple slices.

SERVES: 15-20 PREP TIME: 15 MINS COOK TIME: 1 1/4 hours
Ingredients...
  • 2 apples, preferably green
  • 1 tbsp lemon juice
  • 100g roast turkey or chicken, finely shredded
  • 2 tbsp Greek-style yogurt
  • 1 tbsp mayonnaise
  • 50g soft cream cheese
  • 1 tbsp sweet chilli sauce
  • 15g pecans, chopped and toasted (optional)
  • 10g cranberries, roughly chopped (optional)
  • Small handful of bistro salad or another bagged salad

Method:

  1. Thinly cut the apples into 15-20 slices and toss in the lemon juice. Pat slices dry on kitchen paper and then arrange on a serving plate.
  2. Put all the other ingredients except the salad in a bowl. Season with salt and freshly ground black pepper, and mix.
  3. Top each apple slice with a few sprigs of salad before spooning a little of the turkey or chicken mixture onto each. Serve straight away.

TIP:

The topping for this recipe can be made a day in advance, but don't prepare the apples until you are ready to serve as cut apples quickly turn brown.
